6 WBMO - Chicken Scampi


From member .....

  • 1 lb lean chicken tenders 
  • 1 tablespoon parsley flakes 
  • 1 tablespoon chopped fresh parsley 
  • 1 oz dry dessert wine (BMOS Note: port or sherry might work, or check here for other information)
  • 1 tablespoon lemon juice 
  • ½ teaspoon dry mustard 
  • 1/8 teaspoon pepper 
  • 1 clove garlic, pressed


Marinate chicken in a mixture of remaining ingredients for 5 minutes. Place chicken in marinade in a broiler pan 4 inches from the heat and broil for 5 minutes. Turn chicken, broil 5 minutes more.

Serving suggestion: serve with a side dish of your favorite vegetables.
