6 WBMO - Zesty Ginger-Tomato Chicken

Place chicken in slow cooker. Drain can of tomatoes and reserve one can of juice. Combine tomatoes, juice from one can, ginger, cilantro, garlic, brown sugar substitute and red pepper. Pour over chicken. Cover, cook on low heat setting for 6 to 7 hours or on high heat for 3 to 3½ hours.

Mix arrowroot with cold water. Remove sauce to a sauce pan and bring to a boil. Add water and arrowroot to sauce and stir until thickened. Great with rice
