6 WBMO - Crockpot Coq au Vin

  • 2/3 cup green onions and tops, chopped
  • 2½ pounds skinless chicken pieces (white meat only)
  • 1 small white onion, peeled
  • 8 ounces small mushrooms
  • 1 clove garlic, crushed
  • ¼ teaspoon pepper
  • ½ teaspoon dried tarragon leaves
  • ½ teaspoon dried thyme leaves
  • 1 cup nsa chicken broth
  • parsley, chopped, to taste
  • 1 cup dry red wine

In a large skillet add green onion and chicken with a little water or extra broth and cook over medium heat until chicken is browned on all sides, 8 to 10 minutes. Combine all ingredients, except wine and add to crockpot. Cover and cook on low 8 to 10 hours. During last hour add wine. Excellent over rice or chopped potato.
