6 WBMO - Teriyaki Chicken


From member ....... Teriyaki Chicken has always been a family favorite. After looking at some of the recipes I thought I might be able to come up with a simple recipe for it. We tried this and it was delicious (if I do say so myself!).

I make lots of this so it can be bagged up for meals during the week. Make sure to include plenty of the juice in your meal bags because the longer this sits in the marinade the better it is. This makes a really quick meal.

For more flavor you can marinate the chicken ahead of time, but if you're in a hurry you can do everything at the same time.


BMOS Note: While marinating your chicken will result in juicier, more flavorful results, please be aware that too long a marinating time may actually break down the poultry tissue, resulting in an undesirable change of texture. For this reason, you may wish to keep marinating time somewhere between 2 and 4 hours. 
For purposes of clarification, I'm copying a post which appears further down on the page on the subject of using fruit juices.   Officially, juices aren't on plan other than for purposes of marinating. However, if you figure that you're using 5-6 chicken breasts and we are using approximately five ounces of juice, that works out to about 1 ounce (2 tablespoons) or less per breast. Our serving sizes are typically only a portion of the breast, which cuts down the quantity of juice even more-- and then, because it's a sauce, it's unlikely you'll be consuming every single drop, thus reducing the juice quantity even further.

When all is said and done, BMOS Dolores decided the amount of juice you'd actually be consuming was so minimal, we'd consider the juice a freebie. So enjoy!


Cut up your chicken breasts into bite-sized pieces and place in frying pan. Mix together remaining ingredients and pour over chicken. Bring the mixture to a boil then reduce heat and let simmer until chicken is cooked through and tender.
