6 WBMO - Zesty Baked Italian Chicken (Bulk Recipe)

  • 6 to 8 boneless skinless chicken breasts
  • 2  (28 oz) cans nsa tomato sauce
  • 2  (28 oz)  cans nsa chopped tomatoes
  • 2 large vidalia onions, chopped into large 2x2 inch pieces (ARC Gail:  Vidalia is a sweet onion.)
  • 2 large green peppers, chopped into large 2x2 inche pieces
  • 2 tablespoons dried sage
  • 2 tablespoons dried marjoram
  • 2 tablespoons dried thyme
  • 2 tablespoons dried oregano
  • 2 tablespoons dried sweet basil
  • 1 tablespoon granulated garlic


This is bulk cooking at its best so you might want to get out the turkey roaster for this one or your favorite large roasting pan.  Combine the sauce, tomatoes, onions, green peppers and spices in a large bowl, stir to mix well.  Place the chicken in the pan, pour the mixed sauce over the chicken, cover, and bake at 350 degrees for one hour.  Remove the cover and cook for 30 more minutes.  The extra 30 minutes makes the sauce really thick.  Enjoy!!

*Additional Notes from Patty:  I put one or two chicken breasts with a nice big serving of sauce in freezer bags and can take one out the night before and it is thawed and ready for me to place in my containers for my meals the next day.
Also, I serve this on mashed potatoes, mashed cauliflower, rice, lettuce and even spaghetti squash...it ROCKS on all of these added carbs.
