6 WBMO - Fajitas



From member ..... I am really missing Fajitas and with the whole pancake discussion...here's what I tried.

 BMOS Note: The use of ground oat flour may cause one to lose slowly, or for progress to stop.  Please see ingredient link for more information. 
Also, please bear in mind that oats, like any other grains, expand with cooking and our measurements of grains are taken off the cooked volume.  Since conventionally prepared oats more or less double in volume when cooked, this means that the ½ cup uncooked oats in this recipe equals 1 cup cooked oats.
 

Mix oatmeal flour, egg white, garlic powder, dried onion, and Italian seasoning. Add water a little at a time until batter is thin but not runny. Pour onto hot griddle. Cook 1-2 minutes on first side, flip and cook second side. While cooking second side, cover the cooked side with 1 tablespoon tomato sauce. Cook chicken, peppers, and red onion just until warmed through and serve in "tortilla". Warning: the tortilla is less flexible than a flour tortilla, so wrap while it's still warm, or on the griddle, for best results.
