6 WBMO - Berry Good Mousse


From member ..... I found this in a Woman's Magazine and altered it for use on the plan. The recipe calls for FRESH Strawberries, but I used Mixed Berries frozen, and it was fine. It's delicious and at a recent St. Patrick's Day Party - was gone before you knew it! 

BMOS Note:  The amount of egg white per serving is mimimal and need not be counted. Consider it a freebie!

Please, TASTE your berries before adding sweetener. Depending upon the degree of ripeness you may find that some berries will taste fine just as Mother Nature made them! 


  • 2 tablespoons pasteurized egg white
  • ½ cup Splenda, or to taste (please see BMOS note above)
  • 2 cups chopped berries (frozen or not)
  • ½ cup warm water

Place egg white in a large bowl and mix with ½ cup warm water. Whip for 2 minutes until light and foamy. With mixer, gradually beat in Splenda and berries and increase speed to high. Beat for 15 minutes until mixture fills the bowl.
Transfer to decorative bowl and freeze for 4 hours. To serve, remove from freezer and garnish with fresh fruit.
