I have tried a few different ones. Most are made with a base of coconut oil or a base of cream cheese.
My favorites are Faux Reeses.
This is the site I got the recipe from, which I modified, mostly outta necessity.
The original recipe called for Almond Butter. I have made them with almond butter and they were delish, but almond butter is a bit pricey. I am a Peanut butter lover and always have jars of it in my closet. So I make them with Peanut Butter. Also the original recipe called for 9 tbs of butter, that is a stick and 1 tbsp, I can't afford it, ( I make about 2 batches of these a month ) and honestly the recipe didn't suffer by my removing it.
To me these lil goblets of goodness are just what I need some days.
MMMMMMMMMMM CHOCOLATE!
To do so just drop a tiny bit of chocolate in the mold and a tiny bit of PB then cover with chocolate. Too much work for such a tiny lil mold. I prefer to mix it all together.
Also she uses liquid stevia, and I only keep powder on hand so I changed that up. This is where your taste buds come into play. I start with a 1/4 cup powdered stevia blend, ( I have a sweet tooth) then taste it. If you want it sweeter just add a lil more sweetner to suit your taste.
I have also experimented adding a lil cracked salt to the top after pouring it into the mold which I love. One time I tried dusting cinnamon on top as well before freezing.... Yum.
CHOCOLATE PB FATBOMBS:
3/4 cup melted coconut oil
1/2 cup Natural Peanut Butter
1/4 cup powdered Stevia blend ( Stevia and erythritol)
3 Tbs. cocoa powder
Cracked sea salt or kosher salt *Optional*
Cinnamon or cayenne *Optional* Experiment a little
Mix all Except Salt, spices) in a mixing cup with a pour spout , like a pyrex and microwave for about 30 secs. Stir and taste for sweetness.
Pour into silicone molds ( Salt or dust with spice) and place on tray in freezer for 30 mins.
Pop out and put in covered container and store in fridge.
Makes about 40 or so bombs.
