6 WBMO - Coq Au Vin

I have a Coq au Vin for the crockpot,this one is for the oven....


From member ....... You won't be sorry, this is EXCELLENT!

  • 2 whole chicken breasts, cut into bite sized pieces, skin removed
  • 3 cups fresh mushrooms, sliced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh tomato, chopped
  • 3/4 cup red wine
  • 1/4 cup water
  • 1/4 tsp black pepper
  • non-stick cooking spray **

Spray pan with slight spritz of cooking oil spray**. Heat skillet, brown chicken well on all sides. Remove chicken and set aside. Add mushrooms, onions and garlic. Saute until tender. Add reserved chicken, tomatoes, wine and seasonings. cover and cook over low heat 40-45 minutes. Uncover and cook 10-15 minutes longer to thicken liquid. Pour over rice.
