7-Up Chicken Flavored Seltzer Chicken

Note: Now, how did we let that slip by? Apparently, due to sodium content, Diet Seven Up isn't a plan friendly option-- but perhaps you may wish to try one the other options suggested in the above note by pandoRRa.
- 1½ lb boneless, skinless chicken breasts
- 1 onion, sliced
- 1 bell pepper, sliced
- ½ cup steamed mushrooms
- 2 cloves garlic, minced
- 12 oz can Diet 7-Up**
Arrange chicken in a 3 quart casserole and top with remaining ingredients. Cover and bake at 350° for 35-45 minutes, or until chicken is tender. Uncover and bake 10 minutes more
