6 WBMO - Yummy Potato Salad

From member ......   My husband loves potato salad, so I revised a recipe from Enola Prudhomme's Low Calorie Cajun Cooking cookbook to make it OP. My husband was happy to get potato salad again.

  • 2 medium potatoes, peeled and cut into 1" cubes
  • 1 hard boiled egg white, chopped
  • 1 teaspoon dried dill weed
  • 1 tablespoon finely chopped onion
  • 2 tablespoons (or less) on plan mayonnaise (please see Condiment Recipe Forum)
  • 1/8 Mrs. Dash seasoning
  • 1/8 teaspoon ground white pepper
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon ground black pepper

Place potatoes in a medium saucepan with enough water to cover and bring to
a boil.  Cook 15 minutes, or until potatoes are tender; drain and set aside.
In larger bowl, combine the remaining ingredients; mix well.  Add potatoes,
toss well and serve hot.
