From member ...... This is modified from the Betty Crocker cookbook.
BMOS Note: The original recipe posted in early 2003 called for cooking spray.** To keep the recipe completely on plan, we're changing the cooking method slightly as suggested in a post by Member Nay Nay 38.
- 1 cup uncooked rice
- 1 medium onion, chopped
- 2 cups water
- ¾ teaspoon nsa chili powder
- 1/8 teaspoon garlic powder
- dash of cumin
- dash of cayenne, optional
- ½ cup chopped green pepper
Preheat a cast iron pan and add rice and onions. Cook, stirring frequently, until rice is brown and onion is tender. Add remaining ingredients. Bring to a boil, reduce heat to simmer. Simmer for 30 minutes.
Serving idea: After rice is finished cooking, add cooked ground turkey or chicken. This is easy to measure and tastes pretty good.
