From member magicmistic  Based upon recipe from www.familywok.com

Heat 2 tablespoons chicken broth or white wine in a small saucepan. Add the
ginger and garlic and stir 15-30 second over medium heat to bring out the
flavor. Add ½ cup chicken broth, balsamic vinegar, ground mustard, ground
cinnamon, ground cloves, brown sugar substitute, cayenne pepper, black pepper, and
lemon juice. Bring just to a boil, stirring. Dissolve the arrowroot powder
in the wine and whisk into the sauce. Heat until sauce thickens and reaches
a full boil. Simmer for 30 seconds. Remove from the heat and set aside.

Chimichurri 6WBMO

Chimichurri
__________________________________________________________________________

From member elo135 I had being looking for the longest time a marinade for meats that gives me that "salt seasoned" taste, well, here it is!!! This is an Argentine parsley-garlic sauce for grilled or roast beef but I use it as an excellent marinade for cube steaks!!! I just love it!

  • 1/3 cup red wine vinegar
  • 1 bunch (handful) fresh parsley, chopped
  • 8 cloves garlic, crushed
  • 2 tablespoons oregano, fresh (or 1 teaspoon dried)
  • 2 tablespoons paprika
  • 1-2 teaspoons cayenne pepper (optional)

Mix all ingredients well. Put in a plastic bag with cubed steak for 30 minutes and cook the meat in/with the sauce!! Delicious!!!

For a subtler flavor: Use sherry vinegar instead of red wine vinegar
For a Caribbean-style sauce: substitute cilantro (very well minced) for the parsley, and add the juice of one lime. THIS IS MY ALL TIME FAVORITE!!!

Fried Rice

I Love Fried rice. I will admit to making my own and NOT on Plan. I do use Low sodium soy sauce, but try to drink extra water to flush. I dont add snow peas, rather I stick to whatever I have on hand, usually onion , peppers chopped mushroom and maybe a chopped broccoli floret or two.

I used to make this a lot when I was on Keto. I used cauliflower rice that I bought frozen.

                                                  FRIED BROWN RICE

BMOS Note: Although the original recipe posted in early 2003 called for a handful of frozen peas and low sodium soy sauce, to keep this recipe completely on-plan we have made the substitutions below.

  • 4 cups leftover cooked, cold brown rice
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 large onion, chopped
  • ½ lb mushrooms
  • 2-3 green onions, sliced
  • handful of fresh or frozen snow peas
  • any other compatible vegetables you have in your refrigerator, chopped
  • soy sauce substitute (see Condiments Section, this forum)
  • water or nsa chicken broth as desired, for sautéing (optional)

In a large non-stick skillet, sauté the ginger, garlic, onion, mushrooms and any other vegetables that need pre-cooking, for about 5 minutes over medium-high heat. (BMOS Note: You may add a bit of broth if you wish, or rely upo the vegetables' natural moisture for sautéing.) Transfer to a bowl. Dry off bottom of skillet, return to heat and add rice. Dry fry rice for a while, until some it turns golden brown. Add back cooked vegetables, green onions, and snow peas. Sprinkle with soy sauce substitute to taste and mix well.

Sweet Potato Souffle' 6WBMO

Rikki's Quick Sweet Potato Soufflé (For One)
__________________________________________________________________________

From member Associate BMOS RikkiM It was the oatmeal custard recipe in the Breakfast section that gave me the idea to try the same basic idea with sweet potatoes. I do plan to try it with canned pumpkin some time in the future...especially when I don't have already cooked sweet potatoes or want a slightly different flavor. Goes to show how a little creativity can go a long way and provide some tasty options for us.

  • egg whites
  • 1 capful vanilla
  • ¼ teaspoon favorite baking spice, such as nutmeg, cinnamon, ginger, pumpkin pie spice
  • 1 packet of Splenda, if desired.
  • ½ cup cooked mashed sweet potato

Beat egg whites in large bowl with vanilla, Splenda, if used and spices until frothy. Fold in ½ cup cooked, mashed sweet potato. Cook in microwave for 3-4 minutes on High until done. This can be eaten hot, at room temp or, the way I prefer it, cold.

FYI - You do need to use a large bowl as the mixture will puff up during cooking.

Singapore Rice Nodles

  • 4 oz rice noodles (Rice noodles or rice vermicelli usually comes packaged with 4 layers so I pulled one portion which is 4.375 dry oz)
  • ½ red pepper
  • ½ green pepper
  • 1 medium onion
  • nsa chicken stock or water for sautéing
  • 2 garlic cloves, pureed
  • 1 tablespoon nsa curry powder, dissolved in ¼ cup water

Soak noodles in boiling water for about 5-10 minutes. Thinly slice peppers and onion. Sauté in a little bit of water or chicken stock (I used homemade - no salt) for just a minute or two. Add pureed garlic cloves and water with dissolved curry powder. Simmer on high until half the water is gone and then add the noodles and toss and simmer until most of the liquid is evaporated.

You can have them as a side to something else or toss in some steamed shrimp and sprinkle some fresh lime juice over all.

Potatoes and Onions 6WBMO

                                                           Potatoes and Onions

  • 2 pounds new potatoes (white, red, or Yukon gold), scrubbed and halved
  • 1 pound cippolini or pearl onions, peeled
  • 1 teaspoon freshly ground black pepper
  • ½ cup nsa chicken broth
Preheat the oven to 400 degrees F.

To peel the onions, place in boiling water and continue boiling for 1 minute. Remove from the water and cool. Using a small, sharp knife, cut off the stem and remove skin. Skin should peel off easily.

In a large bowl, toss together all of the ingredients except ¼ cup nsa chicken broth. Spread the mixture in a single layer on a baking sheet. Bake, brushing every 10 minutes or so with remaining chicken broth, until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven
    for 10 to 15 minutes.

Serving Suggestion: Fabulous with Roman Chicken .

Yummy Sweet chicken or shrimp Marinade

I Made this last night with chicken . I changed a couple of things. First off they don't sell sugar twin anymore. But they sell SUKRIN GOLD or LAKANTO BROWN. I don't use splenda brown because it contains sugar.
I have not bought Sukrin gold yet but I do have Lakanto on hand.
Also I did not have any wine so a used a Tablespoon and a half of apple cider vinegar.
After I Cooked my chicken I poured the rest of the marinade in the pan on high and reduced it. YUM!

LIME MARINADE -6 WBMO

LIME MARINADE

A versatile all-purpose marinade. Great on foods to be grilled.

    List of Ingredients

    1/2 cup lime juice
    1/2 cup water
    1/2 teaspoon lemon pepper seasoning

    1/2 teaspoon garlic powder

    Recipe

In a bowl combine lime juice, water, lemon pepper, celery seed and garlic powder. Use as a marinade for beef, chicken or seafood. Makes 1 cup of marinade.

Note: Be aware when marinating seafood, as the acidity will 'cook' the flesh and affect texture. Half an hour should be sufficient for marinating most seafood.

    Apple Sauce Salad Dressings
For a salad dressing, I mix applesauce in with the vinegar and a bit of nutrasweet, any herb or spices are good. Also,I use just a tiny bit of low-salt soy sauce to make a Chinese Salad.
The applesauce makes it a bit thicker (like the oil) & is pleasant to the taste buds!

Mayo - 6WBMO

I found this recipe on recipecircus.com . She has tons of recipes and the 6WBMO recipes are on the bottom of her page.( Use caution,I Just discovered  some are NOT Approved recipes, and contain unapproved foods ) This was taken from Providas website, however it calls for egg beaters. I thought that was a whole egg substitute (with yolk). It might be better for living lean as yolks are not allowed On-Plan .

Mayonaise

this turns out kind of like a mayonnaise flavored like coleslaw sauce.. use less splenda if desired for sweetness issues. This will thicken up even more as it sits in the fridge.

    List of Ingredients

1 carton Egg Beaters (equivalent to 4 eggs)
sugar substitute equal to 1/2 to 2/3 cup
1/2 cup vinegar red or white (I used homemade lemon-dill)
    ground white pepper to taste
    1/3 tsp dry mustard powder
sprinkle of dillweed or other herbs to taste

    Recipe

Whip all ingredients together and heat on stove on medium low until thickened. This scorches easily so be sure to stir constantly. When I made this, it thickened to the point that when I shoved it across the bottom of the pot with a spatula, the bared part on the bottom of the pot stayed bared for a bit. I let this cool and then whipped it with hand blender. Made enough to almost fill a 16 oz jar.

     1/2 cup of balsamic vinegar
     4-5 capfuls of Liquid Smoke**
brown Sugar  (sugar substitute) to taste

    Recipe

Drizzle a little chicken broth into a medium saucepan and grate onion into pan to allow onions to sweat. After onions cook a little, add minced garlic and saute. Hash Browns - 6WBMO

I Love potatoes. Growing up I was the "mashed potato kid"  :-D
The one thing I missed when I was doing keto was potatoes.

I found in walmart potatoes without extra seasoning in the freezer section. Big time saver because dicing potatoes isn't in my talents.
This recipe calls for chipotle pepper. I dont know about that but it worth a try.
I just make mine with onion and red bell pepper. I started adding mushroom as well. 2 scrambled egg whites top it off.
A nice hearty breakfast.

Garlic Mashed Potatoes -6WBMO

Garlic Mashed Potatoes
__________________________________________________________________________

From member JenL. If you don't want to bake the potatoes early, be prepared from start to finish for this to take anywhere from 2 to 2 ½ hours. I like to bake the potatoes EARLY like 3 and let them cool 20 minutes to start the second part. I recommend making larger batches of this. It is great for leftovers.

BMOS Note: The number of portions yielded from this recipe will depend upon the size of the potatoes used.

  • 6-8 potatoes
  • ½ cup nsa chicken broth (you may actually use less depending on the size of your potatoes)
  • ¼ cup onion flakes
  • 2 tablespoons minced fresh garlic
  • pepper, optional

Wash the potatoes well. Be sure to pierce the skin with a fork in different places (It helps reduce the cooking time.) Bake in the oven at 425º till the potatoes are soft and you can easily pierce them with a fork. Take out and let cool somewhat. (It's not necessary to let them cool if you can handle them when they're hot!) Peel the potatoes and place them in a bowl. You'll want to use a fork to mash them up. Add the onion flakes and the garlic. Mix well. Now with your mixer whip up the potatoes. Slowly add the broth and pepper if you like. You want them to look the normal consistency of mashed potatoes. SOOOOO GOOD!

You can lower the amounts of garlic and onion in this if you don't like it to taste as strong. I personally love this meal. The smell is incredible.

MMMM Pina Coladas. 6WBMO

I love pina coladas.  I quit drinking almost 30 years ago. I didn't have a problem drinking virgin coladas however, everything except the alcohol. Until sugar became a problem. Then it was bye-bye pina coladas.
But now I'm back on the Pina Coladas. A healthy version. Thanks to the flavored sugar-free syrups from companies like Torani's, Jordans and DaVinci's we have a wide variety of ways to make food more palatable when trying to lose weight. I have a horrible sweet tooth so those syrups are a godsend for me.

A quick and easy pina colada smoothie would be
1/2  cup pineapple chunks
1/2  cup of pasteurized liquid egg whites
1/2  cup of water
1 tablespoon Torani sugar free coconut flavored syrup
Ice cubes
Additional sweetener, optional

Combine all in a Magic Bullet and enjoy..

3 Words For 2020

I really didn't like that saying New Year New You. It was so cliche. But it was how I was feeling. I stopped making resolutions a long time ago , the last resolution I made was I wasn't going to make any more resolutions it was the only resolution I ever kept LMAO.

But I decided this year that if anything was going to change it was going to have to start with me.
When I left New York in 2014 when my youngin graduated high school I swore that that was going to be the beginning of the second half of my life. I didn't have to worry about school and schedule and all that stuff. I was now able to live my life for me. But that never happened it was just more of the same and I found myself sitting here day after day for years living the same non-existent life.

I have been watching some movies over the Christmas holiday  and it got me thinking  that if I didn't take action to change my life I was going to be dead before I knew it and I was going to have this giant regret and I didn't want that.

Somewhere in all that movie watching and all my thinking I realize that only I can change me and that only I am in control of me and without action those two words mean nothing they're basically dead.

Oatmeal "Rice Pudding" . 6WBMO

I was not much of an oatmeal fan until I started this program in 2009. I didn't grow up eating oatmeal in fact the only warm cereal that my mother made in the winters was Farina. And we loaded that up with butter milk and sugar.
My youngest daughter liked the instant oatmeal packets put a little bit of water in the bowl put the oatmeal in and stick it in the microwave yuck.
When I started this program and started eating oatmeal I had to find a way to dress it up. I used to use just sweetener and cinnamon. But today we have sugar free flavored coffee syrups. My favorite is Torani s'mores and chocolate chip cookie dough. And Jordan's skinny syrup , caramel pecan and caramel vanilla cream.

This dish taste like mock rice pudding to me.

1/2 cup water
1/4cup rolled oats
1/2cup liquid egg whites
2 Tbs Jordan's SF caramel vanilla creme syrup
Cinnamon
Extra sweetner if desired

Bring 1/2 cup water to a boil. Put in oatmeal and allow it to cook down on a medium heat until most of the liquid has cooked out there should be a couple of tablespoons or so of liquid left poor in your egg whites at this point and stir. Add your flavored syrup and stir. Continue cooking until it gets thick just, about 1 min.

Put in bowl sprinkle with cinnamon and enjoy.

Fruit Filled Meringues 6WBMO

This weekend I ran across a recipe and I thought I had screenshotted it but I didn't but I remember it because I made it right after I found it.

I love meringues and this recipe is for meringues with fruit infused .

As a Type A I can have berries so I buy the bag of mixed berries at Aldi's. I took out my portion from the freezer which is a half cup serving and put it in my bullet and ground it down.
I also use pyure sweetener for baking. But I grind it down into a confectionery powder rather than granulated because I find the granulated doesn't always break down and sometimes can leave a grit.

I am pretty sure all body types can eat this, I'm not familiar what each person can have but I'm pretty sure that the berries can be enjoyed from everybody from type A to Type E.

If you are allowed berries for your breakfast this would be an excellent treat to make at night and just leave in the oven overnight to cool.

2 large egg whites ( can use 1/4 cup of pasteurized liquid whites)
1/2tsp lemon juice ( I use the bottled stuff)
3Tbs pyure or powder sweetner of choice
1/2tsp of vanilla or almond extract
Cinnamon (optional)
1/2 cup ground berries ( or finely chopped fruit of choice)

Preheat oven to 220.

In a clean glass bowl, do not use plastic or the eggs won't rise, beat your eggs with electric mixer. When they start to get foamy add your extract and lemon juice. Keep beating ,add sweetner one spoon at a time to fully incorporate.
Keep on high on till the eggs form stiff peaks.

Add in your fruit and sprinkle a little cinnamon on top fold everything together gently, (DO NOT MIX)  and using a regular tablespoon or cereal spoon place a dollop of meringue mixture onto a baking sheet lined with a Silpat or parchment paper.

Bake for 2 hours ON TOP RACK.  Turn off the oven and leave them in there for at least another hour  to crisp up.

They may not look very pretty but they taste like heaven. Especially to somebody like me who has a really bad sweet tooth.

Welcome Back 2020

Welcome back to the New Year 2020. I have to say I am very upset with myself for not sticking with my 6-week body makeover eating plan many years ago when I was on it. Back then I still had hormones and I was losing weight at about 5 lbs a week. I lost 42 pounds in 7 weeks. Life got in the way after that and I allowed myself to go off plan. Immature thinking on my part, I know. But after struggling for the last 3 years or so with keto and not losing a significant amount of weight I decided to go back to what I know works.

Facebook has a group of active 6 week body participants which is great because we have our support again. I only wish provida life sciences would bring the program back and the Forum. It was so much fun back then.
Somebody posted the link to the web Archive of the original Forum of 6-week body and being the recipe hoarder that I am and knowing how quickly the internet changes from day to day I decided to screenshot as many of my favorite recipes and some I have not tried so I have them. I'm hoping that rather than having to type out each recipe I can just upload the screenshot and it will be able to be seen properly on this blog. We shall find out. If not it's going to be back to typing which I really don't like.
