Kiss chicken marinade 2 - 6WBMO

KISS CHICKEN MARINADE 2


    2 cups of Southern Comfort
    3 limes
         -OR-
     2 cups white wine
     3 lemons

    Recipe

    Pour Southern Comfort into bowl, squeeze limes into bowl, stir to mix. Use marinade immediately, marinating chicken approximately 1 hour in refrigerator before cooking. Discard extra marinade after using.

                     -or-
      Pour wine in bowl. Squeeze lemons into wine. Use marinade immediately, marinating chicken approximately 1 hour in refrigerator before cooking. Discard any remaining marinade.

Kiss Chicken Marinade 1 - 6WBMO

KISS CHICKEN MARINADE 

    1 cup white wine
     2 large garlic cloves
     2 large lemons
     1 lime

    Recipe

    Combine wine and minced garlic. Zest lemons and lime into bowl. Cut lemons and lime in several wedges. Squeeze juices into bowl. Put wedges in bowl. Stir. Use marinade immediately, marinating chicken in refrigerator for approximately 1 hour before cooking. Discard extra marinade after using.

Italian Dressing Marinade -6WBMO

ITALIAN DRESSING MARINADE


    From member GiselaT: If you enjoy the flavor of Italian dressing, make your own. I make mine and marinate raw asparagus, then throw it in a basket on the grill -- very tasty.

    List of Ingredients

    1 cup vinegar
    3 tbsp finely chopped onion
    3 garlic cloves, crushed
    1 tbsp dry mustard
    1 tbsp basil (fresh is best, but dry is fine also)
    2 tbsp oregano
    1 tsp pepper
    sugar substitute to taste

    Recipe

    Mix all ingredients and shake until well blended.

Chicken Marinade 2 - 6WBMO

CHICKEN MARINADE 2

    This is good for at least 5 chicken breasts

    List of Ingredients

    1/2 c. balsamic vinegar
    6 fresh basil leaves
    1/4 c. fresh cilantro
    1/4 c. fresh parsley (Italian kind)
    1/8 tsp. black pepper
    1 1/2 tsp. minced garlic
    1/4 of an onion chopped
    no salt seasoning(mrs. dash)

    Recipe

    Mix in quisinart, then smother both sides of chicken breasts, set in fridge for at least one hour before cooking.


    Apple Sauce Salad Dressings
    For a salad dressing, I mix applesauce in with the vinegar and a bit of nutrasweet, any herb or spices are good. Also,I use just a tiny bit of low-salt soy sauce to make a Chinese Salad.
    The applesauce makes it a bit thicker (like the oil) & is pleasant to the taste buds!

    2 tbsp chopped Italian flat leaf parsley
    2 tsp fresh rosemary, minced
    2 tsp chopped fresh thyme
    1 tsp dried sage
    3 cloves garlic, minced
    1/4 cup water
    1/2 cup balsamic vinegar
    pepper to taste

    Recipe

    Combine all ingredients and marinate chicken or other meat at least 2 hours and up to 48 hours.

6 WBMO - Chicken Broccoli Rice

Chicken Broccoli Rice 

chopped onion

vegetable broth

chopped fresh mushrooms

finely chopped broccoli florets

2 oz chopped cooked chicken breast

1/2 cup cooked rice

Simmer chopped onion in vegetable broth until tender. Add mushrooms, broccoli, and fresh parsley, chicken and rice. Add a little more broth if necessary and simmer until broccoli is tender.

6 WBMO - Grilled Hawaiian Chicken

                                                   Grilled Hawaiian Chicken

2 Whole Smart Chicken Breast (enough to yield 12-2oz portions cooked)
2 Green Bell Peppers
2 Red Bell Peppers
2 Yellow or Orange Bell Peppers
2 Large Sweet Onions
2 Large Cans Juice Packed Pineapple Chunks
Roasted Green Chili or Red Pepper Flakes
Italian Herb Seasoning
2 Cloves Garlic

Chopped chicken breasts into bite-size pieces.  Marinate in pineapple juice (drained from cans of pineapple chunks), minced garlic, finely chopped chili peppers (or red pepper flakes) and Italian herb seasonings.  I let this marinate while I chop the onions and peppers.
Clean and chop bell peppers and onions in bite-size pieces.
In a LARGE bowl, combine pineapple chunks (should be about 6 cups), bell peppers, onions and marinated chicken (including liquid).
Grill in grill basket or grill wok until chicken is thoroughly cooked and vegetables are somewhat browned.
Divide into servings based on estimated cooked weight of chicken. 
 

Servings:  10 -12, containing 2 oz  Protein B and ½ cup Fruit A  and Free Foods

6 WBMO - Mongolian Chicken Soup

                                    Mongolian Chicken Soup

 1 lb. Chicken breast
1 onion
 3 carrots
1 head cauliflower
1 potato
 1tsp cumin
1 tsp turmeric
 ½ to 1 tsp cayenne
 ¼ tsp black pepper
 6 cups water
12 tsp no-salt chicken bouillon
 1 tsp sage
1 to 2 Tbls Splenda (to taste, the more you add the more it completely changes the taste)

 Dice everything and throw in iron pot. Simmer until done, approx 20 - 30 minutes.

Not sure of servings. My guess would be one cup of soup? for a portion since it is mostly veggies.

6 WBMO - Italian Chicken

                                 Italian Chicken

 3 Whole Chicken Breasts, Cut into Strips
1 - 2 Red or Green Bell Peppers
 1 Cup Dry White Wine 1 - 2 Sweet Onions, Chopped
 1 - 2 Garlic Cloves, Minced
3 - 4 Zucchini, Sliced
 1 lb Mushrooms, Sliced
5 Cans Chopped Tomatoes (14½oz each)
 1 Can Tomato Paste
 1 Pkt Very Low Sodium Chicken Bouillon
1 Cup Water Italian Seasoning

Mix Pepper Marinate chicken, onions, garlic and bell peppers in wine for about 30 minutes. Pour into large pre-heated skillet and sauté until chicken is cooked through Add remaining ingredients, seasoning with desired amounts of Italian seasoning mix and pepper; simmer for about 30 minutes. Servings: 10 - 12 (depending on cooked weight of chicken)

servings containing 2 oz. Protein B and Free Vegetables (or count as Veg A) Serve over rice or potatoes to include Carb A

6WBMO - CAJUN CHICKEN STRIPS

CAJUN CHICKEN STRIPS

Serve with your favorite sauce (One of the OP ketchup recipes, barbecue sauce, hot chile sauce, salsa, etc.) BMOS Note: The amount of Carb B per serving in this dish is minimal and need not be counted. Consider it a freebie!

1 tablespoon oats, ground in blender, food processor, coffee grinder or Magic Bullet
1 teaspoon nsa poultry seasoning
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon pepper
1/8 teaspoon cayenne (or more! depends on how spicy you like it!)
1½ lbs skinless, boneless chicken breast, cut into strips
nsa chicken broth as needed for sautéing

In a resealable bag, combine the first 6 ingredients. Add chicken strips and shake to coat. Sauté over medium heat in a large non-stick skillet (using a small amount of the broth as needed), until cooked through, turning over halfway through cooking. Usually only takes 5 minutes or so, depending on how thin the strips are.

6 WBMO - BONELESS HOT WINGS

BONELESS HOT WINGS

Warning... this will be HOT.. (depending on how hot your chili powder is), but good!!

16 ounces of boneless skinless chicken breast tenders
½ cup vinegar
½ cup water
3 tablespoons cayenne pepper
½ cup nsa chili powder

Mix vinegar, water and cayenne pepper. Add chicken to mixture and let marinate in refrigerator for a couple hours. Put chili powder on a plate and gently dip each tender in chili powder and then place on a rack in a baking pan. Bake at 350° for about 15-20 minutes or until chicken is no longer pink.

6 WBMO - Broccoli Mushroom Chicken Rolls


From member ......  I happened to come up w/this recipe because I had mushrooms and onions leftover from when I first created my "Pizza Chicken" and the flavor was a wonderful creamy buttery surprise.  The amounts of each veggie in each roll should depend on your personal taste and length of strip. This one is another hit w/the family, they don't even know that it has no salt!

  • chicken breasts, pounded to 1/8" thick
  • no salt seasoning or nsa poultry seasoning
  • 1 large garlic clove minced
  • 1 bunch broccoli (discard stems, separate florets)
  • 1 cup mushrooms, sliced
  • ¼ medium onion, sliced

Preheat oven to 400º F. Slice each breast lengthwise into 3 portions creating thick strips. (BMOS Note:  Please note that your portion depends upon the weight of the chicken breast, so we can’t say with certainty that each strip will be the proper sized portion.) Sprinkle with no salt seasoning or poultry seasoning and garlic. In the center of each strip (across the width) place a few pieces of onion.  The tips should be extended a little off both sides.
Place some broccoli florets on top of the onion slices alternating direction so that there are florets extending a little off both sides. Place the mushrooms on top of the broccoli. Fold the sides of the chicken over the veggie mixture forming a roll (for shorter strips you may need to secure with a toothpick.) Place each roll seam-side down in a non-stick baking pan. Sprinkle each roll  with Italian seasoning. Bake covered for 30 minutes, uncover and bake an additional 10 minutes.

6 WBMO - Wild Herb Stuffed Chicken

Wild Herb Stuffed Chicken

Need to create:
--Marinate breasts
--Mix Stuffing
--Make Tomato sauce for serviing

Marinate 6 Chicken Breasts in white wine for 30 minutes
====
Stuffing - Mix in bowl:
1 cup Portabello Mushrooms and white onions grated in small bits
1/4 cup white rice
ground oatmeal
2 egg whites
Corriander, Fennel Seeds, Paprika, Basil, Parsley, Majoram, Cilantro, 
Tumeric, Cumin
Cover and Refrigerate for 15 minutes
====
Spray Glass baking pan with cooking spray
Preheat oven to 400 degrees
Put baking pan in oven to get hot
=====
12 Wooden Skewers - Cut them in half

Take chicken breast and fan it out as much as possible.
Arrange the meat so that the thinnest/ widest portion is towards you.
Put in a tablespoon of the stuffing mix and roll it up and insert the 
skewers diagonally through each end.
Place in warmed baking pan and do the next.

Cook for 20-30 minutes depending on the size of the chicken breast 
and the altitude of your location.

Take out skewers and put in container to refrigerate overnight.
After the chicken has been cold - take out and cut in 1/2 inche slices.
Portion in bags and refrigerate or freeze.

Tomato Sauce
4 whole tomato chopped
1 white onion chopped
1 red pepper chopped
1 tablespoon lemon juice
2 garlic cloves grated
1 small jalepeno finely chopped
1/4 cup tomato salt free sauce

Put all ingredients in blender and blend until thick soupy sauce 
around 1-2 minutes. Store in refrigerator. Sauce also goes great with 
other dishes/potatoes, etc.

To eat:
Arrange chicken slices in bowl or small plate in a downed domino 
position.
Spoon over tomato sauce
Microwave 30 seconds for non-frozen/ for frozen - microwave 1 1/2 
minutes first then put on tomato sauce and finish for another 30 
seconds.

Chicken Merlot With Mushrooms

2 1/2 to 3 lbs. meaty chicken pieces, skinned 
3 c. sliced fresh mushrooms 
1 large onion, chopped 
2 cloves garlic, minced 
3/4 c. chicken broth 
1 6-ounce can tomato paste
1/4 c. dry red wine (such as Merlot) or chicken broth
2 tbsp. rice 
2 tbsp. snipped fresh basil or 1 1/2 tsp. dried basil, crushed
2 tsp. equal 
1/4 tsp. pepper 
2 c. hot cooked rice noodles 

Rinse chicken; set aside. In a 3 1/2-4-or 5-quart crockery cooker place
mushrooms, onion, and garlic. Place chicken pieces on top of the 
vegetables.
In a bowl combine broth, tomato paste, wine or chicken broth, rice, 
dried
basil (if using), equal, pepper. Pour over all. 

Cover; cook on low-heat setting for 7 to 8 hours or on high-heat 
setting for
3 1/2 to 4 hours. If using, stir in fresh basil. To serve, spoon 
chicken,
mushroom mixture, and sauce over hot cooked noodles .  

6 WBMO Caribbean Chicken

This is a good dinner recipe for those who want to try something different.  
I made it a couple of days ago, and it actually tastes better after a day 
in the refrigerator (once the spices have a chance to marinate). 

Caribbean Chicken
Caribbean Chicken (makes approx 8 servings) 1 pound chicken breast, cut into 2 inch pieces Fat free cooking spray 1 can (14 1/2oz) no salt diced tomatoes, undrained 1 medium bellpepper, diced as small or as big as you like 1 medium onion, chopped (about 1 cup) 1 clove garlic, minced 4 cups of hot cooked brown rice (prepared in low sodium chicken broth adds flavor) Caribbean seasoning (mix the following together in a large plastic bag): 2 tblsp oat flour 2 tsp ground allspice 1/2 tsp paprika 1/2 tsp pepper 1/2 tsp cumin (ground or seed) 1/4 tsp ground red pepper (more if you like it hot!) Prepare Caribbean Seasoning, and shake chicken in bag to coat with seasoning mix. Spray nonstick pan with spray and add chicken. Stir fry over medium heat 7-10 min or til no longer pink. Stir in tomatoes, bell pepper, onion, and garlic. Heat to boiling, then reduce heat. Cover & simmer 5-10 minutes or until vegetables are the way you like. Serve chicken mixture over hot rice. I divided this recipe into 8 containers with chicken & rice mixed together. Enjoy. Zenithe

Bourbon Chicken 

( the alcohol cooks off  & only the flavor is there)

Saute 1 onion and some garlic in a Pam sprayed pan. 
 Take out of the pan, add 4 flattened chicken breasts.
 Cook until brown add the onion and garlic back to the pan. 
Add 2 T NSA chicken stock,
 2 T bourbon, 
Salt Sense, Pepper to taste. 
cover and let simmer for 20-25 minutes until chicken 
is done. You may want to add some more chicken broth and or bourbon to
taste.

Aloha Chicken

Brown 3-4 flattened chicken breast.
Put in a 9 x13 glass pan. Slice 2 bell peppers and set aside.

Drain 1 (20oz) can of  sliced pineapple, save the juice and add water 
to make 1 1/2 c liquid.  
Make a sauce with 1 1/2 c juice, 
1/2 c Splenda, 
3 T cornstarch, Not Allowed, Use Arrowroot or Xanthan
3/4 c vinegar, 
1 T low sodium soy sauce. ( try to use OP Soy Sauce)Drink lots of water LS Soy still has a ton of salt


*Hint*  mix the cornstarch with a little water and add to the other ingredients. Cook until it comes to a boil. Then pour over chicken. Bake at 350 for 40
min. Add pineapple slices and bell pepper, cook another 10 minutes.

Omit the Pineapple Slices. If you are type A or B &,Unless you are having this for snack, then the pineapple is allowed in 1/2 cup serving

Garlicky Chicken Adobo 

(It can be used for pork as well as chicken.)

4 pounds chicken (whole or parts such as breasts, 
legs or thighs cut into serving size pieces)
**I used 8 tenders** 

1/2 cup vinegar; white, cider or wine 
**I used 1/4 cup**

10-12 fresh garlic cloves, peeled and cut in half 
1/2 cup soy sauce Soy sauce was removed from approved list b/c of the Sodium content, there is an OP Soy sauce, I personally use Low Sodium and then drink lots of water.
**I used only a few dashes, since I don't have low or no 
sodium soy sauce**

1/2 cup water 
coarse ground black pepper, to taste 

Brown chicken briefly on all sides in a large non-stick skillet. 
Drain off fat. Add garlic, soy, vinegar, water and pepper. 
Cover and simmer at least 30 minutes (I didn't have to cook 
that long since I didn't have a lot of chicken) or until very 
tender. Turn chicken once during cooking.

Serve with rice to soak up the juice.

For Chicken strips, I marinate them in lemon juice and 
sprinkle both sides with either A LITTLE garlic or 
A LITTLE lemon pepper- I use my fork to make sure the 
lemon juice gets through the chicken and then grill on 
George Foreman grill - The chicken is moist,

White Chili

this is a recipe i like, but i don't measure the ingredients, 
i just add and taste as i go along. 


1-2 lb. chicken cut into cubes and browned 
1 can NSA chicken broth 
1 small can diced green chilis 
plenty of salt substitute  Not allowed but I use it.
ground white pepper 
cumin 
chili powder 
chopped onion/onion powder 
chopped garlic/garlic powder 

combine in a pot and simmer for 20 min. 
i throw tobacco on top of mine right before i eat it 

sometimes i add pinto beans, or sometimes i add mashed potatos to thicken it 

Beans are not allowed on everyones plan. Also Potatoes are allowed in half cup portions for A's but should be made according to plan
