Italian Chicken
3 Whole Chicken Breasts, Cut into Strips
1 - 2 Red or Green Bell Peppers
1 Cup Dry White Wine
1 - 2 Sweet Onions, Chopped
1 - 2 Garlic Cloves, Minced
3 - 4 Zucchini, Sliced
1 lb Mushrooms, Sliced
5 Cans Chopped Tomatoes (14½oz each)
1 Can Tomato Paste
1 Pkt Very Low Sodium Chicken Bouillon
1 Cup Water
Italian Seasoning
Mix
Pepper
Marinate chicken, onions, garlic and bell peppers in wine for about 30 minutes.
Pour into large pre-heated skillet and sauté until chicken is cooked through
Add remaining ingredients, seasoning with desired amounts of Italian seasoning mix and pepper; simmer for about 30 minutes.
Servings: 10 - 12 (depending on cooked weight of chicken)
servings containing 2 oz. Protein B and Free Vegetables (or count as Veg A)
Serve over rice or potatoes to include Carb A

6 WBMO - Stuffed Tomatoes

Stuffed Tomatoes
6 oz. NSA canned tuna or leftover tuna
(NSA) 6 egg whites
1 cup finely diced celery hearts
12 large Roma tomatoes
If using canned tuna, drain all the water off. If using fresh tuna, shred it. Finely chop or grate the egg whites. Cut the tomatoes in half, legthwise--then using a spoon, dig out the pulp, chop and set aside. Place the tuna, egg whites, celery and tomato pulp in a mixing bowl and stir. Fill each tomato shell with 2 T. of the tuna mixture.
Four tomato halves would then be one 2 oz serving of protein. Thus, this makes 6 2-oz servings of protein.

CHICKEN CACCIATORE

1 medium onion, thinly sliced
1.75 lbs boneless, skinless chicken breasts (about 4 half breasts)
1 clove garlic, minced
1 14 oz can salt free tomatoes, chopped
1 8-ounce low salt tomato sauce
1/4 tsp pepper
1 tsp oregano leaves, crushed
1/2 tsp basil, crushed
1 bay leaf
1/4 cup dry white wine
Place half of the onions on bottom of a 2-1/2 qt baking dish.
Add chicken pieces, rest of onions and the remaining ingredients.
Cover and cook 350 degrees for 1-1/2 hours or until chicken is done.
After this is cooked, I weigh my chicken then divide the sauce mixture.
Serve with rice and a green salad.
I get between 7 or 8 meals (2 oz chicken each)

6 WBMO - Zesty Ginger-Tomato Chicken
From member ....... Adapted from Better Homes and Gardens Biggest Book of Slow Cooker Recipes
- 2-3 pounds of boneless skinless chicken breast
- 2 (14 ½ oz) cans nsa tomatoes
- 1 tablespoon grated fresh ginger
- 1 tablespoon fresh cilantro or parsley, chopped
- 4 cloves garlic, minced
- 2 teaspoon brown sugar substitute
- ½ teaspoon crushed red pepper
- 1 tablespoon arrowroot powder
- cold water
Place chicken in slow cooker. Drain can of tomatoes and reserve one can of juice. Combine tomatoes, juice from one can, ginger, cilantro, garlic, brown sugar substitute and red pepper. Pour over chicken. Cover, cook on low heat setting for 6 to 7 hours or on high heat for 3 to 3½ hours.
Mix arrowroot with cold water. Remove sauce to a sauce pan and bring to a boil. Add water and arrowroot to sauce and stir until thickened. Great with rice.

6 WBMO - Chicken with Tomatoes and Spinach

- 5 cloves garlic, sliced thin
- ½ cup nsa chicken broth
- 28 oz can nsa whole tomatoes
- 8 oz can nsa tomato sauce
- 5-6 oz baby spinach
- 8 oz grilled or cooked chicken breast- cut up into bite size pieces
- 1 handful fresh basil
Cook garlic in broth till tender in ¼ cup of broth....add more broth if evaporates
Pour in whole can of whole tomatoes- breaking up tomatoes in to smaller pieces, add small can of tomato sauce and bag of spinach. Cook until spinach wilts. Add chicken and simmer together for 15 minutes over low heat. Add more broth if needed. Should be a loose consistency. Tear up basil and add in at the end.

6 WBMO - Huevos Rancheros
From member ....... I was having a hard time with the egg whites. With this recipe I can have them every morning if I like...It's delicious!
- 14½ - 15 oz can nsa diced tomatoes
- 6 tablespoons nsa tomato sauce
- 1 teaspoons minced garlic
- 1 tablespoon nsa chili powder
- 1/3 cup chopped onion
- 1/3 cup chopped bell pepper
- 2 egg whites
Mix all ingredients except egg whites in sauce pan. Cook on med-high heat for 30 minutes. In a nonstick skillet, "fry" two egg whites. Top the eggs with the chili before serving.
