6 WBMO - Baked Apple with "Syrup"

From member .... I was craving something sweet one night for my PM snack and came up with this. It's really simple, smells great and tastes even better. YUMMY!!

BMOS Note: In addition to the meals listed below, if working out afterward and supplemented with the appropriate quantity of protein and carb, all body types may enjoy this recipe as part of a preworkout breakfast, morning or afternoon snack.

  • 1 Red Delicious Apple
  • 1 teaspoon vanilla
  • ½ packet Splenda, or to taste
  • ½ teaspoon cinnamon, or to taste

Core apple and peel a strip from the widest part of the apple (helps prevent apple from exploding). Place in bowl. Drizzle vanilla into the middle of the apple and over top. Sprinkle with Splenda and cinnamon. Cover with plastic wrap. Microwave for 2 - 4 minutes depending on size of apple and wattage of microwave. (Microwaving the apple made it a wee bit rubbery, but I was too impatient to wait more than an hour for it to cook in the oven.) The apple juice that cooks out of the apple mixes with the Splenda and vanilla and makes a really sweet syrup to dip the apple into as you eat it. I couldn't resist getting a spoon and finishing up the syrup once the apple was gone. Depending on the size of the apple, this could make two 1/2 cup servings. Perfect to share!
